Photo of the Day: Day Forty-Eight

One cup of quinoa.

Later cooked in 2 cups of boiling water and spices, added to black beans and salsa, eaten alongside broccoli and half an artichoke for dinner.

Trivia: quinoa is not actually a grain (although it’s often eaten like one), but instead is a “pseudocereal” related to beets, spinach and, my favorite, tumbleweeds. It’s also a wonderful source of essential nutrients and surprisingly, protein.
